New restaurant concept to replace Charro in Brookfield

  

Milwaukee-based SURG Restaurant Group (SURG), announced that it will close its Charro restaurant at 17800 W. Bluemound Road in Brookfield and replace it with a new concept.

"I am excited about our new concept, which will include beef and pork raised at Hidden Creek Farms," said SURG co-owner Mike Polaski. "We feel this will be better suited for the suburban market and look forward to unveiling it to the community." Hidden Creek Farms is located in New London, Wis., and is owned and operated by Polaski.

SURG Restaurant Group also owns Carnevor, Ryan Braun's Graffito, Distil, Mikey's, Umami Moto and the downtown Charro restaurant.

Charro, which opened in 2009, will close August 20, 2011 with many of the staff being temporarily relocated to other SURG restaurants. The closing will not affect the downtown Charro location.

The new concept is expected to open early in the fourth quarter with executive chef Aaron Patin taking the helm in the kitchen. Patin's experience includes managing Chicago's Park Grill at Millennium Park and Nashville's Radius 10.

"Aaron's experience and style will be a perfect fit for the new restaurant," said co-owner Omar Shaikh. "We know we're keeping an element of suspense to the clientele that choose SURG restaurants as their primary choice for dining, but we will be unveiling more details the closer we get to the opening."
