Wild Flour Bakery & Café will officially open its fourth location Saturday in Milwaukee's Bay View neighborhood and plans to open another restaurant in South Milwaukee this fall. The Bay View Wild Flour is located at 422 E. Lincoln Ave. Dolly Mertens, who co-founded Wild Flour Bakery & Café with her husband, Greg, in 1996, told SBT this morning that the company's fifth location will be at 1205 W. Milwaukee Ave. in South Milwaukee. The company has purchased the 4,000-square-foot site, which formerly was the home of the South Milwaukee Bakery. Milwaukee Avenue, the commercial hub of South Milwaukee, has declined in recent years, as vacant storefronts and rowdy taverns became more prevalent. Dolly Mertens is hopeful her new bakery can add to the rebirth of the street. "We really like to go into communities where we can help them, and that's what we want to do in South Milwaukee," Mertens said.
